1-Methylcyclopropene (1-MCP) is an ethylene inhibitor that irreversibly binds to ethylene receptors, blocking the ethylene binding sites. This compound enhances the activities of SOD and POD enzymes. Additionally, 1-Methylcyclopropene delays the softening of soft jujube kiwi fruit, thereby extending its shelf life and storage duration. It achieves this by reducing the activity of cell wall-modifying enzymes, which slows down the degradation of cell wall components (including pectin, cellulose, and hemicellulose).
